The Macao Institute for Tourism Studies (IFTM) said in a statement yesterday that its IFTM Educational Restaurant is now providing its Signature Macanese lunch or dinner buffets on Saturdays, while food products are also being sold in its retail corner.
The statement noted that IFTM was appointed as the protection unit for “national intangible cultural heritage linked to Macanese Gastronomy” in 2021, with the higher education institution being responsible for its promotion and heritage protection, while taking measures to prevent its disappearance.
The restaurant’s chefs, the statement said, have been committed to the study, preservation and revitalisation of traditional Macanese recipes, adding that “nostalgic dishes” including stuffed bitter gourd (margoso lorcha) and fried vegetables with shrimp paste (bredo raba raba) have become part of the current menu.
At its retail corner, products such as Macanese shrimp paste (balichão) and corn starch cookies (genetes) are sold. Traditional Macanese cakes such as coconut cake (bolo menino) are available to order, according to the statement.
Meanwhile, the statement said that restaurant patrons can also learn more about Macanese cuisine through materials such as valuable manuscript recipes, cookbooks and dissertations in the “Macanese Gastronomy Corner”.
The restaurant is open from Monday to Saturday, with its lunch period being from 12 p.m. to 3 p.m., while dinner is from 6:30 p.m. to 10 p.m. Sundays and public holidays are by appointment or reservations. The Macanese buffet is served only on Saturdays.
