New York’s iconic roadside burger stand Shake Shack has opened its first outlet in Macau – at The Londoner in Cotai. The soft opening was in mid-April.
Shake Shack Culinary Director Mark Rosati told The Macau Post Daily by email on Friday that the new Shake Shack uses local ingredients and partners with local purveyors to reflect the Shack’s community inclusion. He pointed out that his team has created three signature menu items made exclusively for The Londoner’s location to reflect the tastes of Macau.
He elaborated that “the first-ever Macau Shack will be serving up a selection of Macau exclusive menu items, including ‘Shakes and Concretes’. The Ginger Crush, a hand-spun milkshake inspired by ginger milk pudding, is a vanilla frozen custard blended with ginger juice, pineapple purée, mango purée, topped with whipped cream and candied ginger; Olá, Serradura Concrete, a freshly made concrete inspired by the traditional local serradura, dessert, is a vanilla frozen custard blended with tea cookies [rich tea biscuits], toasted coconut and malt powder and Queen of Tart Concrete, a freshly made vanilla frozen custard blended with Portuguese egg tart and strawberry purée.”
In the US, a concrete is a dessert of frozen custard with various toppings.
The local “serradura” dessert is also known as “sawdust pudding”.
When asked about the interior design of the shop and how it was tailored for The Londoner, Rosati said that Macau Shack’s interior design is also tailored for the neighbourhood. He pointed out that Shake Shack aims to create a community gathering place for its customers, so each Shack will have a slightly different feel.
“The interior design of the Macau Shack is inspired by the lotus, which symbolises the everlasting prosperity of Macau. Playing with the lotus leaves and flower elements bring refined and elegant details into Macau Shack’s identity to create an elevated and fresh look. Featuring the undulating shapes of the lotus, the curved ceiling line and contrasting light timber and stone strikes a perfect balance between modern and luxurious aesthetics, creating a unique gathering place for both locals and travellers,” Rosati said.
Besides the local specialities, the statement noted that the Macau Shack also offers the classic ShackBurger, Shroom Burger for vegetarians, Flat-top dogs, Crinkle-Cut Fries, Chick’n Shack and Chick’n Bites. The shop also offers souvenir items exclusive to Macau such as black Shake Shack mahjong tiles, waterproof playing cards, and black-and-green playing dice set.
Macau Shack opens from 11 a.m. to 11 p.m. daily.
For Macau residents who can’t visit New York right now, Shake Shack brought New York to Macau.
Shake Shack reportedly started out as a hot dog cart inside Madison Square Park in 2001, and its popularity has steadily grown ever since.
