Grill 58 showcases original concepts

Grill 58 chef de cuisine Conor Beach, introduces three original concepts through Bar 58, Grill 58 and Teppanyaki 58 under one outlet, according to a statement by MGM Cotai, yesterday.

At Grill 58, the statement noted that the Shrimp Cocktail Tarts, one of Chef Conor’s creations, features Nordic cold-water shrimps brined and grilled over lychee wood and Japanese charcoal, dressed in a homemade cocktail sauce with Thai basil and curry leaves. The statement added that it also includes an interpretation of Tuna Tartare, with a marinade of Saikyo miso that gives the pink yellowfin tuna a sweet aroma, and is layered with crème fraiche on grilled homemade brioche toast. Moreover, Grill 58’s main attraction, the only custom-built Himalayan pink salt meat-ageing room, features a 28-Day Aged Snake River Farm M7 Wagyu Bone-In Ribeye, a signature dish, the statement underlined.

The statement pointed out that at Teppanyaki 58, guests can choose from three menus that “feature different cuts of premium beef and fresh seafood”.

Meanwhile, Bar 58 features a variety of handcrafted cocktails and an internationally awarded wine list.

The statement highlighted Grill 58’s Sunday Brunch menu features five sharing starters, which are the Fine de Claire Oysters served with Fermented Tomato and Smoked Bonito Oil, House-Cured Petuna Salmon Trout, Ibérico Cold Cuts, and Artisanal Cheeses from Les Freres Marchand and Grill 58 Caesar Salad. The main course includes Australian M9 Wagyu Bavette, Pan-Fried Japanese Sea Bream served with grilled leek and hazelnut Pil Pil sauce, among others, while also offering four different desserts.

The statement said that the Sunday brunch menu is priced at 480 patacas per person and features “free flow juices”, while selected red, white and sparkling wines are available at an additional 180 patacas per person.
