Celebrity chef Jereme Leung serves authentic Jiangnan cuisine at the Venetian

Gourmet restaurant ‘Jiang Nan by Jereme Leung at The Venetian Macao’ is committed to serving the authentic flavours of Shanghai, Jiangsu and Zhejiang.

According to a recent statement by the US resort operator, Hong Kong-born Leung honed his craft in Singapore, and has been active on the Chinese culinary scene ever since. The statement noted that Leung was a judge on the Chinese edition of MasterChef for several years, and appeared in the popular food documentary “A Bite of China”.

“Jiang Nan by Jereme Leung at The Venetian Macao represents an unparalleled opportunity to share this superb yet underrepresented regional cuisine. Through the use of fresh, high-quality ingredients and contemporary cooking techniques, we will present an elevated dining experience. An evolving seasonal menu means there will always be new and surprising additions to delight customers. My diverse background allows me to look at Chinese cuisine from a broader perspective. I am constantly bringing new things into the kitchen with the belief that I can better present traditional dishes, giving them a new twist,” Leung said in the statement.

Jiangnan (“South of the River”) is a geographic area referring to lands immediately to the south of the lower reaches of the Yangtze River, including the southern part of its delta. The region encompasses Shanghai, the southern part of Jiangsu province, the southeastern part of Anhui province, the northern part of Jiangxi province and the northern part of Zhejiang province. The most important cities in the area include Hangzhou, Nanjing, Ningbo, Suzhou, Wuxi, Wenzhou, and Zhenjiang.

According to the statement, an example of traditional Jiangnan dishes providing a Macau connection is “Fortune Chicken”, which is based on the classic dish “Beggar’s Chicken” and resembles a gold ingot that is ceremonially cracked open at the table before serving. Another dish, the statement added, “Mahjong Full House – Shanghai’s White Rabbit creamy candy” consists of colourful mahjong tiles identical to the real thing in every way except they are created using the popular White Rabbit sweets many will remember from their childhoods.

The statement also noted Jiang Nan’s interior design which is based on the Shanghai Art Deco movement of the 1920s and 1930s, adding that Shikumen brickwork enhances the sense of space that artfully conveys both homeliness and Chinese-style luxury, with elements formed by bespoke furniture, lighting and artwork.

Shikumen (“Stone Warehouse Gate”) is a traditional Shanghainese architectural style combining Western and Chinese elements that first appeared in the 1860s.

The statement pointed out that a playful theme references birdcages throughout the restaurant, while the modern chinaware, custom-made by Hong Kong designer Monica Tsang, features bird motifs.
