The St. Regis Macao said in a recent statement that its restaurant The Manor presents its latest sustainable dining initiative with an all new six-course menu featuring sustainably sourced ingredients and wines.
The statement pointed out that its Chef Michele Dell’Aquila continues to design his new menu by sourcing for sustainable food producers and utilising seasonal ingredients, highlighting his philosophy of protecting the environment and supporting social responsibility.
According to the statement, the signature dishes that showcase sustainable ingredients in the all new six-course menu include baby artichokes from El Tamiso with marinated langoustine and fava beans with herbs, Kyoto Snow Crab served with asparagus, ravioli filled with eggs, Reblochon cheese and vegetables, Dover sole from Prodemar served with baby celeriac, razor clams and vermouth sauce, Yukimuro Snow-Aged A4 Wagyu dressed with black truffle sauce accompanied with Suntory’s Hakushu whisky, and Chocolaterie De L’Opéra made with chocolate mousse, almond praline and smoked chocolate sauce. The statement noted that the six-course dinner menu is available daily from 6 p.m. to 11 p.m. and is priced at 1,288 patacas per person or 1,788 per person with wine pairing.
