Four of Sands Resorts Macao’s restaurants have been recognised for their culinary excellence in the South China Morning Post’s (SCMP) 100 Top Tables 2023 – A Fine Dining Guide, according to a recent statement from the gaming resort operator.
The statement noted that each year the list features 100 of the best restaurants in Hong Kong, while 25 are chosen from Macau. The statement added that the 100 Top Tables is considered “the definitive authority on fine dining” in both special administrative regions (SARs).
The featured restaurants are The Venetian Macao’s premium Cantonese restaurant Pin Yue Xuan, The Londoner Macao’s Huaiyang cuisine restaurant The Huaiyang Garden, The St. Regis Macao’s signature restaurant The Manor, and Four Seasons Hotel Macao’s award-winning Zi Yat Heen.
According to Wikipedia, Huaiyang cuisine is one of the Four Great Traditions in Chinese cuisine. It is derived from the native cooking styles of the region surrounding the lower reaches of the Huai and Yangtze rivers and centred on the cities of Huai’an, Yangzhou and Zhenjiang in Jiangsu province.
Helmed by Executive Chef Darren Cheung Kam Tung, the statement underlined that Pin Yue Xuan’s inclusion soon after its opening was “especially notable”, winning “the hearts of diners and critics alike for its flavoursome delicacies, exceptional service and elegant ambience”.
The Huaiyang Garden, which showcases the flavours of Huaiyang cuisine, is curated by “The Godfather of Huaiyang Cuisine” Zhou Xiaoyan. At The Manor, contemporary European cuisine is presented by renowned Executive Sous Chef Michele Dell’Aquila, according to the statement.
Meanwhile Zi Yat Heen, which the statement said has been the jewel in the crown of the Four Seasons Hotel Macao since opening, is helmed by Executive Chinese Chef Charles Cheung (張志才).
The statement added that 100 Top Tables is a “trusted reference” for senior executives to choose the finest restaurants for both leisure and business. Each dining experience element is examined to highlight the best of Hong Kong and Macau’s “superior dining establishments”.
The shortlisted restaurants have to meet criteria such as “outstanding food, impeccable service and suitable ambience for executive dining, ranging from fine to chic-casual”.
