The Parisian Macao said in a statement yesterday that its French restaurant Brasserie will celebrate French GourMay Food & Wine Festival’s 14th edition with a specially curated dinner menu.
According to the statement, the festival is the “one and only major festival” in both Hong Kong and Macau that is dedicated to gastronomy à la française. Themed “Bubble Up”, the event highlights France’s famed sparkling wines and “unboxes the art on the plate and makes gastronomic philosophies accessible to everyone”.
The statement added that French sparkling wines are a symbol of joy and festivity and have been served to mark memorable events or enjoy “les petits plaisirs de la vie”, which means “little pleasures in life”.
The four-course French GourMay menu is created by French Executive Chef Daniel Brolese and highlights the country’s unique culinary treasures.
The statement said that the meal will start with an amuse-bouche of pâté en croûte (a pie appetiser) with duck foie gras and prune confit in Armagnac.
For appetisers, guests can choose marbled octopus carpaccio with citrus and oyster in Crémant d’Alsace jelly and caviar, or braised veal sweetbread feuilleté in morel sauce, according to the statement. They can then have the Bouillabaisse-style fish soup with seafood crouton and aioli sauce.
Meanwhile, the statement said that the main course options feature rainbow trout fillet in almond crust, endive meuniere and lemon butter sauce; and braised white bean stew with Toulouse sausage, duck confit and lamb shank. Dessert, meanwhile, includes vanilla and rum baba with vanilla ice cream and rum jelly or selected cheeses by the restaurant’s Parisian affineur.
Priced at 648 patacas per person, the menu is only available for dinner from today through May 31, the statement added. However, it is not available from May 13-14. Guests can also pair dishes with two selected French wines such as the acclaimed Pol Roger Brut Réserve Champagne for an additional 238 patacas.
Moreover, the Spring Weekend Afternoon Tea is available during the weekends from 3 p.m. to 6 p.m. from today through May 28. It is priced at 368 patacas for two and features sweet and savoury “floral-inspired” treats.
