Leading figure in the modern Portuguese culinary scene and celebrity chef Henrique Sá Pessoa has introduced a new six-course dinner tasting menu “Costa a Costa” Dégustation Journey to his contemporary restaurant Chiado at The Londoner Macao in Cotai, the integrated resort operator said in a statement yesterday.
The statement noted that Chef Sá Pessoa’s restaurant, Alma in Lisbon, holds two Michelin stars, adding that the “Costa a Costa [Coast to Coast]” menu includes dishes also served there.
The menu, the statement said, celebrates seafood in every course and starts with Red Prawn, featuring the sought-after deep-sea prawn Carabineiro, paired with a traditional açorda (bread soup) and sea lettuce (edible algae), followed by Monkfish and Lobster Rice, the statement said.
The menu also features the inventive dessert Sea Flavours and Citrus, which pairs umami-forward sea sponge and crystalised algae with the vibrancy of citrus, and yuzu sorbet, the statement added.
Sá Pessoa was quoted by the statement as saying that “Portugal is famous for its seafood and Costa a Costa, a menu from my two-Michelin starred restaurant Alma, is a tribute to seafood, taking diners on a journey along Portugal’s coastline through each carefully conceived plate”.
New signature dishes can also be found on the la carte menu, including two from the degustation menu such as Red Prawn and Hake, while two other creations are Lamb, where tender lamb is paired with red cabbage, Alentejo migas (“crumbs”) and smoked eggplant, and a Rice Pudding Foam dessert served with saffron ice cream and miso caramel.
