On Thursday, French pastry chef and author Angelo Musa showcased his pastry-making skills during the “CHOCOL’ART Culinary Demonstration” at The Vista of MGM COTAI, with the event attended by over 80 pâtissiers and small- and medium-sized enterprise (SME) owners from Macau, along with chefs and entrepreneurs from Hong Kong and the mainland.
A celebrity chef, Chef Musa, who has over 30 years of pastry making experience, provided his insights on pastry-making and demonstrated four types of chocolate pastries using eight different types of chocolate from Chocolaterie de l’Opéra, a French artisanal chocolatier established nearly a century ago.
According to an MGM statement provided at the event, Musa has earned a raft of accolades throughout his 30 years of industry experience such as winning the World Pastry Cup in 2003 and Meilleur Ouvrier de France (MOF), which means French Craftsperson of the Year, in 2007. Moreover, he was also bestowed the Knight of the Order of Arts and Letters in 2019.
Speaking with the media after the event, Musa told the Post that he has worked in pastry for over 30 years and that it took a lot of time for him to become what he is today. “I have no secret. I just worked a lot”, in addition to having a constantly growing passion, the pastry chef noted,
Regarding the advice that he would give to those who might want to follow the same career path, Musa told the Post that confidence was key. “You need to believe in yourself. You need to be confident. You need to work, but you need to understand what you want to do”.
He has also told younger chefs not to “work like a robot”, underlining: “You need to know what you do and why you do this. It’s very important to give a sense to your job”.
The importance of taking one’s time in this industry was also highlighted by Musa, adding that continuous learning was part of it.
Moreover, Musa said that it was “a real pleasure to travel and share my knowledge with so many people” and different cultures. “It’s really powerful for me”, he said.
