Mandarin Oriental serving the ‘wagyu’ of ducks from Ireland

The local Mandarin Oriental is currently serving the “wagyu” of ducks from Ireland’s Silver Hill Farm that celebrity chefs Heston Blumenthal and Gordon Ramsay also use.

The hotel’s Vida Rica restaurant held a tasting event earlier this week to mark the launch of the duck brand’s presence in Macau, inviting local and Hong Kong media and chefs to try what it claims to be the “Best duck in the world” from Silver Hill Farm.

Founded by Ronnie and Lyla Steele 55 years ago, the family business began with six top quality ducks that gradually developed into their own breed that is exclusive to Silver Hill Farm, it says on its website, and is the secret to the company’s success being able to produce a duck that is “full of flavour, succulent, tender and consistent in its q uality”.
