With the weather getting cooler, restaurants are starting to prepare hotpot dishes.
At Broadway Macau, its food street is turning into a hotpot street with restaurants offering different kinds of hotpot and clay pot meals.
There are 60 types of hotpot to choose from; among them is the classic Braised Lamb Brisket Casserole offered at Lei Ka Choi restaurant, which uses grass-fed Chinese black lamb with water chestnuts, bean curd skin and secret sauce prepared in a clay pot over a charcoal flame to ensure the meat is cooked to the right tenderness with slow, even heat. Last year, more than 7,000 of this lamb casserole were sold over a six-month period, representing seven tonnes of lamb brisket used.
