There are “8 Great Cuisines” in China and StarWorld Hotel is bringing some heirloom recipes from those cuisines for guests to savour the timeless flavours at the hotel’s Jade de Jardin, Feng Wei Ju, Laurel and Sensations restaurants this month.

The eight culinary traditions in China are Anhui, Fujian, Guangdong (Cantonese), Hunan, Jiangsu, Shandong, Sichuan and Zhejiang, and chefs from the restaurants at the hotel are each presenting a dish, from simple delights to creations that surprise the senses based on traditional recipes, each representing a region.

At Jade de Jardin, the culinary team is recreating the Jiangsu classic “Deep-fried sea cucumber with crunchy noodles” which is one of the famous dishes that used to be served at state banquets in Suzhou. The chefs also selected the timeless favourite Sautéed Smoked Yellow Croaker, one of many delicacies from coastal Zhejiang, for the culinary promotion. The fragrant dish, which is considered a rare treat, is prepared by marinating the fresh yellow croaker and smoking them with tea leaves, fruit and aromatic vegetables.
