** Bolo do caco is a circular Madeiran flatbread, shaped like a cake and thus called bolo (Portuguese for “cake”). It is traditionally cooked on a “caco”, a flat basalt stone slab. Madeira is a Portuguese autonomous island region in the Atlantic.
