La Chine launches ‘Black Pearl Dégustation Menu’ to celebrate 3 awards

According to a recent statement by Sands Macao, La Chine Restaurant at The Parisian Macao in Cotai has been awarded a rating of Two Diamonds, meaning it is perfect for special occasions, by the Meituan Black Pearl Restaurant Guide and a Diamond rating by the Trip.com Group Gourmet 2021 Top Global Restaurant List, as well as the award  “Macao’s Best Restaurant” in the T. Dining Best Restaurant 2021 competition by Hong Kong Tatler, adding that chef Ben Lui has crafted an array of special dishes to delight guests in the “Black Pearl Dégustation Menu”.

According to the statement, La Chine is a French name that aims to show the Chinese culinary identity of the restaurant.

The statement notes that La Chine is a Cantonese restaurant, of which, Lui, who is from Hong Kong and has worked in the industry for over 30 years, is the head chef. The statement points out that before joining La Chine, Lui was head chef in a renowned restaurant in Shanghai, adding that he specialises in preparing Cantonese cuisine, such as smoked baby pigeon, chilled Australian lobster and deep-fried fish maw, using traditional cooking skills and the “finest” seasonal ingredients. The statement underlines that Lui has also added new culinary elements, such as Hong Kong-style Street treats, to the restaurant.

Lui said in the statement that the restaurant aims to pass on the Cantonese culinary culture to the next generation, adding that visually appealing elements of classic poetry and art are also added to the dishes to strengthen the importance of presentation.

Meanwhile, the statement stresses that in order to celebrate the honours with its guests, the restaurant has launched the “Black Pearl Dégustation Menu” with six courses of “scintillating signature” dishes from appetisers to soup to hot dishes, such as marinated slow-cooked abalone with Yunnan spicy sauce, double-boiled chicken soup with matsutake mushrooms, stir-fried Boston lobster with black truffle and prawn bisque egg white, as well as homemade almond and egg white sweetened soup with bird’s nest.

The menu costs 1,888 patacas per person.
