The St. Regis Macao’s The Manor will present ‘The Connoisseur’s Table – The Flying Winemaker Wine Dinner’ next Thursday, according to a statement from the hotel.
The statement noted that the dinner will feature six award-winning wines from The Flying Winemaker, complemented by a six-course menu crafted by Executive Sous Chef Michele Dell’Aquila.
Flying Winemaker is an award-winning modern-era wine producer that owns a collection of brands from the New World and is led by founder and winemaker Eddie McDougall, the statement pointed out. It is among the “leading voices in wine” and has the philosophy that wine should be easily enjoyed by all.
The upcoming event will have a Prosecco Brut, King Valley, Australia, N.V. as a welcome drink designed to open up the senses. The statement underlined that the menu highlights include the Reblochon Tortelli, complemented by McDougall’s Little Pig Rosé, Margaret River, Australia, 2022, which is inspired by a memory between Eddie, who was born in the Year of the Pig and grew up in Hong Kong, and his grandmother (“po po” or “婆婆”), who fondly called him “Little Pig” (“豬仔”).
Other highlights are the Hokkaido Scallop, complemented by Sauvignon Blanc, Wairarapa, New Zealand, 2021, and the Wagyu Beef Cheek paired with the Cabernet Sauvignon, Margaret River, Australia, 2019, which includes notes of blackcurrant and woodsy flavours that make it a “perfect match” for the Wagyu, the statement said.
The menu will end with a Valrhona Dulcey with pistachio sponge, vanilla Chantilly and hazelnut ice cream.
