GEG hosts 2nd module of star cuisine workshop

Galaxy Entertainment Group (GEG) hosted the second module of its “Behind the Scenes of Star Cuisine” Workshop Series at Galaxy Macau in Cotai, which was attended by nearly 100 participants from the local tourism and F&B industry, as well as small and medium-sized enterprises (SMEs), the integrated resort (IR) operator said in a statement earlier this week.

The workshop series comprises three modules and was launched by GEG in conjunction with the Macau Government Tourism Office (MGTO) and the Municipal Affairs Bureau (IAM). “By showcasing GEG’s stringent standards in the management and operations of food safety and F&B, the activities aim to inspire the industry’s strive for higher standards and best practices”, the statement said.

IAM Food Safety Department Chief Cheong Kuai Tat and his team also attended and supported the GEG-designed second module.

The statement noted that the module started with a sharing session by GEG Food & Beverage Vice President Anthony Goh (吳運樁) introducing participants to the main features and functions of the Central Production Kitchen of Galaxy Macau, the largest of its kind in Asia’s integrated resort industry. It covers over 3,600 square metres and supplies over 500 products daily to GEG’s related restaurants and “leads the Asian integrated resort and hotel industry by example in terms of occupied area and operational scale”, the statement said.

The statement added that following the sharing session, the participants inspected various food processing areas in the kitchen to learn about GEG’s standard operating procedures on bulk production, raw materials handling, and product packaging. Discussions on best practices were also held.

An SME representative and event participant surnamed Leung said in the statement that the on-site inspection enabled him to learn how well-developed and high-standard operating procedures can significantly improve product quality and operational efficiency, and providing him with valuable insights for the future improvement and optimisation of his own business.

The third module is slated for the third quarter at the Galaxy International Convention Centre (GICC).
