Consistent quality leads to consecutive Michelin stars: chef

The 2018 Michelin awards for Hong Kong and Macau have granted two of the restaurants in Macau’s Grand Lisboa Hotel three Michelin stars again this year.

They are the Chinese fine-dining restaurant The Eight and French restaurant Robuchon au Dôme.

On the sidelines of the awards ceremony, Robuchon au Dôme Executive Chef Julien Tongourian was asked by a reporter whether it was a challenge to maintain the Michelin stars, he replied, “Yes, everyday is a challenge to satisfy my guests, [so that they] enjoy to come to [the restaurant] eat, and every day we need [to do] that”, adding that his restaurant were able to receive the honour again because his guests enjoyed going to his restaurant, and it was his goal every day.
