‘Behind the Scenes of Star Cuisine’ workshop series kicks off

The launch ceremony and first module event of the “Behind the Scenes of Star Cuisine” workshop series was held yesterday at the Galaxy International Convention Centre (GICC), with over 400 representatives from the local tourism and catering industry, and GEG staff from various departments, in attendance.

The series, jointly organised by integrated resort (IR) operator Galaxy Entertainment Group (GEG), the Macau Government Tourism Office (MGTO) and the Municipal Affairs Bureau (IAM), aims to enhance food hygiene and safety knowledge and practices of local tourism and F&B practitioners and related GEG staff, and strengthen collaboration between the industries, a statement provided at yesterday’s event noted.

With three modules, including thematic sharing, seminars and field trips, over three quarters, yesterday saw the launch of the first module, which focused on food safety protocols and hygiene awareness.

The ceremony was officiated by MGTO Director Maria Helena de Senna Fernandes, IAM Department of Food Safety Head Cheong Kuai Tat, and GEG Human Resources and Administration Group Director Eileen Lui Wai Ling.

Senna Fernandes noted in her speech that in the series, “catering employees have the chance to learn more about the standards and practices of food safety, which promotes enhancement of service quality in the sector and brands Macau as a UNESCO Creative City of Gastronomy.”

Moreover, Cheong said in his speech that through “interactive exchanges and sharing of experiences, we aim to enhance the establishment of networks for food safety, foster mutual understanding, and promote the continuous improvement of food safety standards in Macau”.

Lui added in her speech that the “workshop series serves as a valuable platform for team members and the industry to engage in exchange and mutual learning.”

The second module in the second quarter will include on-site inspections and provide participants with insights into GEG’s central kitchen’s batch production, raw material handling and packaging processes, according to yesterday’s statement. The third module in the third quarter, the statement said, will focus on ingredient and supplier selection, delivery and receiving procedures, supply security and quality maintenance through a thematic sharing session with the industry.
