Studio City’s Pastry chef Ho Hoi Lon and her assistant at the contest Huang Liqin were crowned champions with their “Blossom” cake at this year’s Pastry Challenge which took place earlier this week.
The Anchor Food Professionals Pastry Challenge was held at the Macau University of Science and Technology’s (MUST) The Seasons training restaurant. The annual event, held for the seventh year in Macau now, was aimed at nurturing young pastry professionals and serving as a platform for them to shine.
Based on this year’s “Floral Codes” theme, the competing teams had to complete within a limited period of time a cake using at least one floral ingredient, Anchor Extra Whip Whipping Cream and at least one other Anchor dairy product, and other ingredients.
The cakes were evaluated by their taste and presentation through creativity, skills and teamwork by a judging panel headed by Meilleurs Ouvriers de France (MOF- “Best Workers of France”) Pâtissier (Pastry Chef) Jean-François Arnaud, who is also a pastry consultant of Academy of Pastry Arts Malaysia.
Ho and Huang from Studio City won the contest with their cake “Blossom”, with MGM Cotai’s Ip Wai Teng and Lin Fu Xing in second place, and Wynn Macau’s The Min San and Lynn Woon Zi Lin in third place. The Anglisse Excellence Award went to MUST training restaurant The Season’s U Chan Seng and Ao Ieong Ut San.
Ho and Huang told reporters that they chose roselle as the floral ingredient in their cake because the flower has a sour taste that gives the cake a refreshing flavour when blended with cream cheese, a recipe that they agreed on after having tried making the cake four times with different combinations of ingredients.
