North restaurant at Venetian has launched a special menu featuring classic Guizhou dishes.
Different to other Chinese regional specialities, Guizhou cuisine has a distinctive character that is not only spicy but also full of flavours.
Regional dishes in the special menu, overseen by the restaurant’s chef who is a Guizhou native so to ensure that the flavours are authentic, include deep-fried pork ribs with coriander and preserved vegetables; rice noodle soup with braised beef, tripe and pickled vegetables; poached sliced beef, bean curd and bean sprouts; and Guizhou’s most popular dish – poached whole catfish in a classic sour soup with dipping sauce.
