The Cultural Affairs Bureau (IC) said in a statement yesterday that it has launched a programme called “International Call for Macanese Cuisine Recipes”, which aims to enrich the government’s Macanese Cuisine Database and facilitate further studies about culinary arts.
Customarily, the term “Macanese” refers to Macau’s ethnic community of mixed Portuguese and Asian descent and its sizeable disapora. In culinary terms, “Macanese” denotes the community’s unique fusion cuisine which comprises recipes and ingredients from Portugal, China, India, Africa, and the Malay Peninsula.
The IC statement noted that in 2017 the city became a UNESCO Creative City of Gastronomy because of the Macanese cuisine’s uniqueness. The statement also said that Macanese cookery is part of the city’s “invaluable intangible cultural heritage”, adding that it also “plays an active role in Macau’s sustainable development”. Therefore, the bureau has launched the programme to “preserve and promote Macanese cuisine”.
According to the statement, the programme calls for digital recipes or manuscripts that are related to Macanese cuisine. The data collected will be kept in the “Macanese Cuisine Database” which will be accessible to the general public. The statement also said that the database can be used for research and the promotion of Macanese gastronomy.
The statement said that the programme calls for recipes to come in from around the globe. The statement added that for more information about the programme, anyone interested can visit www.icm.gov.mo/mcrecipes.
