Experience ‘House of Celebration’ at St. Regis Macao

St. Regis Hotels & Resorts in Asia Pacific invites its guests to experience the “House of Celebration”, inspiring them to “relive the timeless and storied festivities” of the brand’s founding family, the Astors, St. Regis Macao said in a statement on Wednesday.

The statement noted that the celebration defines a unique theme for each of the four seasons. Starting with the Celebration of Place for summer, The Manor has launched the six-course “Celebrate Sustainability” dinner menu.

Executive Sous Chef Michele Dell’Aquila, who insists on choosing the best organic and sustainable ingredients from around the world, will present dishes made from seasonal and sustainable ingredients, the statement said.

The menu starts with a premium Geay L’Ultime oyster from France that has a plump, creamy flesh and a complex, briny flavour, and is topped with Sturia Oscietra caviar. This is followed by the Senryo eggplant from Okayama, which showcases the prefecture’s “highest vegetable production value”, the statement added.

The 5DO Cinq Degrés Ouest Brittany lobster uses a premium quality lobster from France harvested by “breakthrough technology” for a more ecological and efficient way of catching them, the statement added. The lobster is slowly cooked in Japanese dashi and garnished with sweet and sour radish from Eric Roy.

The statement said that the menu’s highlight is Les Viviers de Noirmoutier Mediterranean red mullet with Riserva San Massimo risotto from Italy. Chosen from a company committed to sustainable production, the red mullet from France highlights the risotto rice.

Moreover, the Zen-Noh Miyazaki A5 wagyu has a “melt-in-the-mouth texture” and a taste derived from an abundance of fat, grilled over binchotan charcoal, and garnished with various vegetable purées, according to the statement.

For dessert, the peach and Marius Auda flowers features organic flower honey, edible flowers, and The St. Regis signature blended tea with organic fresh peach. The Maison Francis Miot organic flower honey, sourced from a renowned French artisanal jam maker, completes the dish’s profile, the statement said.

Priced from 1,388 patacas, the menu is available daily from 6 p.m. to 11 p.m., and can be paired with premium biodynamic, and sustainable wines for 1,988 patacas per person.
